营养标签在餐饮业中的应用 被引量:3

摘要 目的使居民了解餐厅饭菜的营养成分信息,在餐桌上宣传普及营养知识,指导居民合理膳食、培养良好的饮食习惯。方法选择银川市某一高档餐厅,采用称重法对其经营的主要饭菜进行调查,利用营养素计算器软件计算各种饭菜的主要营养素含量。结果共调查面点、凉菜和热菜三类53个品种的饭菜,按照我国《食物营养标签管理规范》中的食品营养标签营养素参考值,为每种饭菜标示了营养标签。其中西式糕点的能量较高,某些饭菜的含盐量以及脂肪的含量较高。结论营养标签标示方法简单,容易掌握,在餐饮业实施营养标签制度,对消费者乃至整个社会,都会带来积极作用和深远的影响。
