摘要
为提高冷冻菲律宾蛤仔品质,分别以魔芋葡甘聚糖、壳聚糖及魔芋葡甘聚糖与壳聚糖(1∶1)溶液对菲律宾蛤仔进行被膜预处理后再进行冷冻试验。分析了不同预处理对冷冻菲律宾蛤仔品质的影响规律。结果表明,被膜预处理可有效改善冷冻菲律宾蛤仔品质,降低冷冻菲律宾蛤仔VBN值,提高产品合格率;在相同浓度条件下,以魔芋葡甘聚糖被膜预处理效果最优,并获得到了冷冻菲律宾蛤仔的优化预处理工艺参数。
To improve the quality of frozen Ruditapes philippinarum, glucomannan, chitosan and a mixture of glucomannan and chitosan ( 1 : 1 ) were used to coat Ruditapes philippinarum prior to freezing.Effects of different coating pre-treated on the quality of frozen Ruditapes philippinarumwere analyzed.Results showed that coating pre-treated could clearly improve the qualities of frozen R uditapes philippinarum, and obviously prevented the product VBN value increased.Glucomannan coating was the best one among three coating pre-treatments. Finally, the glucomannan coating processing parameters of frozen Ruditapes philippinarum were optimized.
