摘要
汤在人们膳食中有着重要的作用,美味佳汤历来受到人们的喜爱。营养汤在中国有着五千年的历史。营养汤产业将是中国未来几年新兴的市场,因此,对汤的分类及特点、加工工艺现状以及风味研究进展进行了综述,并对营养汤类的研发提出了一定的设想。
Soup plays an important role in peopleg dietary, delicious soup is also many people~ fa- vorite. Nutritional soup has a history of over five thousand years in China, nutritional soup industry will have the hit in China emerging market in the next few years. Therefore, in this article, the classification and characteristics of current situation and flavor, and processing techniques of soup were summarized, and certain ideas for nutritional soup were also put forward.
