摘要
[目的]分析夏黑葡萄果粒品质,并对其挥发物进行SPME-GC-MS分析。[方法]在长势良好的葡萄植株上采摘3~5个成熟果穗,测定粒重、出汁率、可溶性糖含量、游离氨基酸含量、可溶性蛋白质含量、酸度,另对其挥发物进行GC-MS分析。[结果]夏黑葡萄果粒中蛋白质、氨基酸、可溶固性物及糖含量分别为0.47 mg/g、1.99μg/g、15.83%和15.33%,酸度为0.43%,糖酸比为36∶1,各项指标均优于维多利亚品种。GC-MS分析出夏黑葡萄挥发性物质有16种,其中含量较高的酸酯类物质可能是夏黑葡萄气味特征的主要构成成分。[结论]该研究对进一步提高夏黑葡萄推广种植效益有指导意义。
[Objective] The purpose was to analyze Xiahei grape's quality and study its volatile compounds analysis by SPME-GC-MS.[Method] 3-5 bunch of mature grapes were picked from plants with good growth vigor,and then determined single grape weight and their juice yield,soluble sugar content,amino acid content,soluble protein content and acidity,GC-MS analysis was carried out at the same time.[Result] Xiahei grape's soluble protein content,amino acid content,soluble solid content and soluble sugar content was 0.47 mg/g,1.99 μg/g,15.83% and 15.33% respectively,and their acidity was 0.43%,and their sugar-acid ratio was 36∶ 1,all indices of Xiahei grape were better than those of Weiduliya grape.GC-MS analysis results showed that Xiahei grape had 16 kinds of volatile compounds,those of which with high contents of ester substances might be the main component of odor characteristics.[Conclusion] The study has a guiding significance for deeply improving Xiahei grape's popularization and planting economical benefit.
