摘要 对烟73葡萄色素的提取工艺及其稳定性进行了研究。选择提取温度、提取时间、提取剂浓度和提取剂pH进行单因素试验,确定条件范围,然后在单因素的基础上进行正交试验,得到最佳提取工艺为提取温度为70℃,提取时间为60 min,乙醇体积分数为60%,提取剂pH为2.0。并研究了葡萄皮色素的稳定性,结果表明,葡萄皮色素在日光照射下不稳定,使用时应避光处理;对热稳定,可适于高温杀菌和食品的加工生产;对氧化剂不稳定;对防腐剂比较稳定,可与常用防腐剂混合使用。 The extraction technology and stabilities of Yan73 grape pigment were studied.The extraction temperature,the extraction time,the ethanol concentration and the extraction solvent pH were selected for single factor experiments to determine the range of conditions.Based on the single factor experiment,the orthogonal experiment was done,and the optimal extracting conditions were that the extracting temperature was 70 ℃,the extracting time was 60 min,the alcohol concentration was 60% and the solvent pH was 2.0.The stability of Yan73 grape was preliminarily studied.It was demonstrated that grape skin pigment was not stable to the irradiation of sunlight.As a result,it should be used in dark.Yan73 grape was heat-stable and was suitable for high-temperature sterilization and food processing.Yan73 grape was found unstable to oxidant but stable to preservative,so it could be used with common preservatives simultaneously.
