摘要
花生被黄曲霉菌污染后产生的黄曲霉毒素对人和动物有很强的致癌作用。叙述了目前花生油中黄曲霉毒素B1的污染状况,对引起黄曲霉毒素B1产生的原因、防控方法和技改措施等方面进行了阐述,重点对小型花生榨油厂在原料控制和加工过程中技术控制上进行探讨,旨在对小型花生榨油厂在黄曲霉毒素B1的防控上起到指导作用,将黄曲霉毒素B1量控制在安全水平。
The aflatoxin was produced by Aspergillus flavus.The peanuts have a strong carcinogenic effect to humans and animals after being contaminated.The current pollution of aflatoxin B1 in peanut oil were described,the reasons to,prevention and innovation measures were elaborated,the focus on the small peanut oil extraction factory in raw materials and processing technology control was discussed,the aim was to play a guidance role in the prevention to the aflatoxin B1 and keep the amount of aflatoxin B1 in a security level.
