煲汤技术历史悠久,尤其以广东老火靓汤最为有名。老火靓汤也是广东最有特色的饮食文化之一,具有营养保健的功效。综述了广式老火靓汤的特点、功效,如何煲汤以及工业化方面的思考,为广式老火靓汤的发展提供参考。
The history of soup is long, especially Cantonese-style soup. The Cantonese-style double-stewed soup is one of the distinctive food cultures in Guangdong. It is full of nutrition and good for health. The article summarizes the characteristics of Cantonese-style soup, function, soup and thinking of the soup technical. The purpose of the paper is providing reference for the development of Cantonese-style double-stewed soup.
