摘要
长期咀嚼食用槟榔可导致口腔疾病,槟榔纤维是口腔疾病的诱因之一,软化槟榔纤维可降低口腔疾病的发生。总结了当前软化槟榔纤维的物理、化学、生物和复合软化技术,比较了其优缺点,并提出辐射加工技术在槟榔制作中的应用前景。
Prolonged chewing edible areca nut may lead to oral diseases. Areca nut fibre is the main trigger factor for oral diseases. Softening areca nut fibre may decrease the occurrence of oral diseases. In the present review, areca nut fibre softening techniques, such as physical methos, chemical methods, biological methods and combined method, were summarized and their advantages and disadvantages were discussed. It was also put forward that the radiation processing technology had a promising application prospect in the processing of areca nut.
