对中国餐饮食物浪费及其资源环境效应的思考 被引量:62

摘要 我国餐饮食物消费中日益普遍的恣意浪费现象,已经成为阻碍我国经济社会可持续发展的严重问题;但是对食物浪费的研究并未引起足够的重视。社会上对此问题存在诸多认识误区。本文针对我国餐饮业中的食物浪费问题,结合媒体报道,探讨我国餐饮食物浪费的严重性,开展餐饮食物浪费的资源、环境效应研究的重要性。最后讨论了开展餐饮食物浪费研究的科学问题和研究重点。 Nowadays, widespread waste in China's food consumption particularly in catering industry is becoming a severe obstacle to the construction of ecological civilization on the road to sustainable development in China; but it is a pity that the problem of food waste has not been taken serious enough in the field of scientific area; there are many misunderstands in the society. This paper therefore focused on the severity of food waste in catering industry and its impacts on resources and environment, and ultimately clarified the urgency and main scientific problems as well as a framework in conducting research of food waste in catering industry in China,
