摘要
主要介绍北京烤鸭加工工艺,对生产工艺进行深入探讨,并针对烤鸭常见的质量展开分析,提出了具体的解决方法。
In this paper, the processing technique of Bei -jing roast duck was introduced and deeply investigated. The quality problem of roast duck was analyzed, and related solutions were proposed.
