摘要 为了保证食品质量与安全,满足消费者需要,需要在食品生产、加工过程中对食品品质和安全信息进行实时检测。高光谱成像技术作为一种无损检测方法,能够实现食品品质和安全信息的快速、高效、准确检测。作为本综述的第二部分,本文主要介绍高光谱成像技术在水果与蔬菜的品质检验方面的应用,同时对其在奶制品、谷类、蘑菇等方面的研究成果也进行介绍,最后叙述高光谱成像技术的应用前景及目前的局限性。 To ensure food safety and meet the consumers' increasing demands for the quality of food products, it is of vital importance to develop effective quality inspection systems during processing operation for the food industry. Hyperspectral imaging, as a non-destructive detection technique, allows rapid, efficient and accurate inspection of food quality and safety information. As an extension of our previous review, this paper specifies recent applications of hyperspectral imaging in quality inspection of vegetables, fruits, dairy products, grains and mushrooms and discusses its future trends and current limitations.
