摘要
目的:调查本市餐具消毒企业消毒餐具的卫生状况,为监督管理提供技术依据。方法:对本市部分餐具消毒企业生产的消毒餐具进行随机采样,进行大肠菌群和烷基(苯)磺酸钠检测。结果:总共检测各类餐具样品406份,总合格率为82.76%。大肠菌群合格率为79.76%,各类餐具大肠菌群合格率无显著性差异(P>0.05)。烷基(苯)磺酸钠合格率为97.14%,筷子与其他餐具合格率有显著性差异(P<0.05),并且筷子烷基(苯)磺酸钠残留量为0.061 mg/100 cm2,将近是其它餐具的2倍。结论:本市餐具消毒企业消毒餐具仍存在卫生问题,今后应重点加强监督管理。
Objective:To investigate the sanitary status of disinfected tableware in centralized sterilization companies in Tongxiang city and provide technical basis for supervision and management.Methods:Sterilized tableware was sampled randomly from part of tableware sterilization companies,and coliform and alkyl sodium sulfonate were detected.Results: 406 samples from kinds of disinfected tableware were detected,with the total qualified rate of 82.76%.The qualified rate for coliform was 79.76%,there were no remarkable differences among rates of all kinds of disinfected tableware(P0.05).The qualified rate for alkyl sodium sulfonate was 97.14%,there were remarkable differences between the qualified rates of chopsticks and other disinfected tablewares(P0.05),and residue of alkyl sodium sulfonate for chopsticks was 0.061 mg/100 cm2,nearly 2 times of other disinfected tableware.Conclusion: There are still sanitary problems for disinfected tableware in centralized sterilization companies in Tongxiang city.The health supervision and management should be further strengthened.
