摘要
交叉污染是导致食品质量安全问题的重要因素之一。本文就交叉污染的概念、发生机理及污染因素的来源进行了论述。同时针对目前交叉污染的实际情况,从人员健康卫生、设备清洗消毒、虫害控制、物理化学交叉污染控制等方面提出了切实可行的预防控制措施,为降低食品安全风险奠定了理论与实践基础。
Cross contamination was one of important factors to cause the problem of food quality and safety. The paper studied the conception, occurring mechanism and origin of cross contamination. To face to the present situation, the paper presented the feasible prevention control measures, including the workers' health, the cleaning and sanitizing of equipments, the insects control and physical and chemical cross pollution control, which established the theory and practical base to decrease the hazard of food safety.
