摘要
采用3个实验条件对比研究不同结构西红花苷稳定性规律。分别在pH3、光照(1200lux)、温度(60℃)条件下保存西红花苷-1(crocin-1)、西红花苷-2(crocin-2)、西红花苷-3(crocin-3)和西红花苷-4(crocin-4),不同时间点取样后采用紫外分光光度法测定剩余西红花苷含量。根据获得的时间浓度曲线求出不同样品的降解半衰期t1/2。在3个实验条件下,西红花苷半衰期随着分子结构中糖数量的增加,降解半衰期逐渐减小。西红花苷分子中的糖基团不利于分子共轭双键的稳定性。
In order to comparatively investigate stability of crocins under three different conditions, pH3, light (1200 lux) and temperature (60 ℃) were chosen to study stability of crocin-1, crocin-2, crocin-3 and crocin-4. Sampling at different times were followed by the content determination with UV. Afterward, tl/2 of different crocins were calculated by regressing time-concentration curves. Under three different conditions, t1/2 significantly decrease when the sugar groups increase. Sugar groups are the reason of unstability of crocins.
