摘要
从化学工程角度阐述降度或低度白酒中乙醛、乙缩醛的化学平衡 ,引伸出由于酒精度不同 ,恰到好处的量。
The chemical equilibrium of acetaldehyde and acetal in low alcohol liquor was illustrated from the angle of chemical engineering. It was concluded that appropriate quantity and quantity ratio relationship was the remarkable characteristic of high quality liquor due to the difference of alcohol.(Tran.by YUE Yang)
