大豆磷脂湿胶的稳定性研究 被引量:1

摘要 从新鲜大豆磷脂湿胶中提纯可得到高质量卵磷脂 ,但由于其含水量高 ,贮存稳定性低于干燥的粗磷脂。本研究通过测定大豆磷脂湿胶在一定的贮存时间后其成分和指标的变化 ,得出大豆磷脂湿胶在常温 (2 0℃左右 )下贮存不超过 1 0d时间是稳定的 ,如果温度更低 。 High quality lecithin was obtained by purificating from fresh soybean phosphatide wet gum, but its storage stability was inferior to that of dried crude phosphatide because of its high moisture content. It was concluded by determing the variation of composition and index target of phosphatide wet gum after being storaged for a definite time that the soybean phosphatide wet gum remained stable when storaged at normal atmospheric temperature (about 20 ℃) for less than ten days, and the stable storage time was longer if the temperature was much lower.
