产β-半乳糖苷酶乳酸菌的筛选及其益生性研究 被引量:7

摘要 分析比较了实验室保存的13株乳酸菌β-半乳糖苷酶的活性,并对β-半乳糖苷酶活性较高的菌株进行耐受性、疏水性及凝乳效果的测定。结果表明,德氏乳杆菌保加利亚亚种ML12-2-2和嗜热链球菌KC4的β-半乳糖苷酶活性较高,对酸和胆盐耐受性较好,对碳氢化合物也表现出很好的疏水性,同时对脱脂乳具有较好的凝乳性能。这两株菌种具有作为益生菌用于乳品发酵的潜力。 In this study,β-galactosidase activity of 13 lactic add bacteria strains was compared, and strains with higherβ-galactosidase were assessed for their survivability in low pH environment, high concentrate ox gall broth, their hydrophobicity and clotting ability. The results shows that Lactobacillus delbruekii ssp. bulgaricus ML12-2-2 and Streptococcus thermophillus KC4 had good tolerance to acid and ox bile, possessing excellent hydrophobicity and meamng good clotting ability for the skimmed milk. Swains ML12-2-2 and KC4 can be used as potential pro- biotics in fermented milk.
