摘要
食品质构描述口腔对食品或农产品的感受有关的一类品质,常用质构仪来进行测量和评价。文章简述质构仪的构造及其原理,并且介绍质构仪的基本测定模式,如压缩、穿刺、剪切等的应用,为质构及质构仪在食品研究开发中的推广提供参考。
The texture describes some quality of food or raw materials and it could be determined by texture analyzer. The paper introduced its structure and principle as well as its basic measuring model, such as: extrusion, puncture, cutting, bending, etc and its application in order to popularize texture.
