产蛋白酶优良腐乳生产菌毛霉的分离筛选与鉴定 被引量:5

摘要 从3个不同来源地的腐乳毛坯中分离纯化获得36株毛霉菌株,通过透明圈法初筛选出3株产蛋白酶能力较强的菌株,发酵复筛选出1株腐乳优良生产菌HM-2,依据形态学结合ITS序列分析,该菌株HM-2鉴定为雅致放射毛霉(Actinomucor elegans)。 Thirty-six Mucor strains were isolated,purified and obtained from different sources fermented tofu.Three Mucor strains with high-yield of proteinase were obtained by screening with the method of transparent zones. The best producing strain HM-2 was gain by using fermentation test on tofu. It was identified as Actinomucor elegans based on morphological characteristis and ITS sequence.
