摘要 本文介绍了面粉中添加过氧化苯甲酰的作用及其危害,综述了近10年间过氧化苯甲酰检验方法的研究及进展,包括样品前处理及定性分析、定量检验的原理及检出限等。检测方法主要为5类,化学分析法、光谱法、色谱法、质谱法及电化学法,并对面粉中过氧化苯甲酰分析方法进行了总结和讨论。 An introduction on the role of adding benzoyl peroxide in flour and its hazards and a review on the recent progress on testing methods of benzoyl peroxide, which covering mainly the last decade and relating especial- ly to sample pretreatment, qualitative analysis and quantitative inspection principle, detection limit etc. , were presented. The testing methods were divided into five types: chemical analysis, spectrometry, chromatography, mass spectrometry and electrochemical analysis. The methods for testing the benzoyl peroxide added in flour were discussed and summarized.
