摘要
分析比较革囊星虫和方格星虫主要营养成分。结果,革囊星虫鲜样中粗蛋白(15.5%)高于方格星虫(11.2%),灰分(0.98%)低于方格星虫(1.01%);革囊星虫和方格星虫中测出18种氨基酸,革囊星虫的氨基酸总量、必需氨基酸总量及鲜味氨基酸总量均高于方格星虫,必需氨基酸组成符合FAO/WHO对于膳食蛋白质营养评价理想模式;革囊星虫矿物元素含量均高于方格星虫,革囊星虫的锌铜、锌铁比值合理.研究表明,革囊星虫氨基酸种类组成合理,营养价值等同方格星虫。
We compared the main nutritive components in Phascolosoma esulenta and Sipunculus nudus.The results reveal that the content of protein in Phascolosoma esulenta(15.5%)is higher than Sipunculus nudus(11.2%).The content of ash in Phascolosoma esulenta(0.98%) is lower than Sipunculus nudus(1.01%).Eighteen amino acids were discovered in Phascolosoma esulenta and Sipunculus nudus.The contents of total amino acids,essential amino acids and delicious amino acids in Phascolosoma esulenta are higher than Sipunculus nudus.Essential amino acids is in accord with the standard of Food and Agriculture Organization of the United Nations/Word Health Organization(FAO/WHO).The contents of minerals in Phascolosoma esulenta are higher than Sipunculus nudus.The Cu/Zn ratio and Zn /Fe ratio of Phascolosoma esulenta are optimal.It is indicated that Amino acid compositions of Phascolosoma esulenta are optimal,and nutritional value in Phascolosoma esulenta is equal to Sipunculus nudus.
