摘要
采用3种初始气体比例(直接包装,4%O2+5%CO2+91%N2,100%O2)来保鲜鲜切菠萝,研究贮藏期鲜切菠萝品质变化。结果表明,初始气体为4%O2+5%CO2+91%N2时对鲜切菠萝保鲜效果最好,在10℃下贮藏9 d仍能保持良好的品质。
Three kinds of atmosphere packaging (directly packaging, 4 % O2+5 %CO2+91%N2, 100 % O2) were used to studied the effect of fresh-cut pineapple quality during storage. The results showed that the package of 4 % O2+5 %CO2+91%N2 was the best effect. It could keep good quality after 9 d storage under 10 ℃.
