摘要 研究了14株常见芽孢杆菌在不同的水分活度和pH值条件下的生长特性。结果表明:芽孢杆菌对低水分活度(<0.86)和低pH值(<4.4)的耐受性均有限,使用柠檬酸来调节pH值能达到更好的抑菌效果。 The growth character of 14 species of Bacillus spp.at different water activities and different pH values were studied in this paper.The results showed that Bacillus spp.had limited tolerance toward low water activity(〈0.86) and low pH value(〈4.4) conditions.Citric acid enhanced the inhibitory effect toward Bacillus spp..
