摘要
以淡水鱼为主要原料加工传统鱼丸,并将具有营养保健价值的莲子和红枣添加到鱼丸中,进而开发莲子红枣保健鱼丸。通过单因素试验,研究淀粉和莲子、红枣的添加量,采用正交试验,研究白砂糖、味精、食盐、小苏打、复合磷酸盐的最佳添加量。结果表明:莲子红枣保健鱼丸的最佳配方为淀粉15%,莲子浆10%,红枣浆12%,食盐2.0%,白砂糖1.5%,味精0.8%,小苏打0.8%,复合磷酸盐0.2%。此产品肉质鲜嫩,具有莲子红枣特有的风味,并具有保健功能。
Fish-ball was made of freshwater fish. Explore that adding the lotus nut and red dates of nutritious and healthy function into fish-ball to develop lotus nut and red dates nutritious fish-ball through single factor experimental study starch, lotus nut and red dates, through orthogonal experimental study sugar, monosodium glutamate, salt, sodium hydrogen carbonate, compound phosphate best recruitment. (The result showed that the best formula was 15%starch, 20%lotus nut serum, 12%red dates serum, 2.0%sah, 1.5%sugar, 0.8%monosodium glutamate, 0.8%sodium hydrogen carbonate, 0.2%composite phosohate.) The result also showed that lotus nut and red dates nutritious fish-ball and red dates fragrance and taste, healtheare function.
