摘要
目的对昆山市学校及托幼机构食堂食品卫生监督量化分级管理实施前后的卫生状况进行综合评价。方法应用层次分析法将学校及托幼机构食堂卫生状况诸因素先按支配关系分组,使之成为有序的递阶层次结构,通过两两比较,确定层次诸因素相对重要性,然后综合判断,确定学校及托幼机构食堂卫生整体水平。结果学校及托幼机构食堂场所面积、布局流程、三防设施、专间卫生、生熟分开、餐具消毒、原料索证、卫生制度、健康证明、食品留样的卫生状况组合权重(Wi)分别为0.3591,0.1678,0.0750,0.0350,0.1645,0.0667,0.0270,0.0623,0.0289,0.0134,卫生状况综合指数(V)V实施前=59.09,V实施后=78.34,得V实施后>V实施前。结论学校及托幼机构食堂食品卫生监督量化分级管理促进了教育主管部门加大了学校及托幼机构食堂基础设施改造的投入,促使学校食品卫生自身管理水平的提高,量化分级管理实施后卫生整体水平明显好于实施前,层次分析法有较大的应用潜力。
[Objective]To comprehensively evaluate the hygienic situation in dining rooms of schools and kindergartens in Kunshan City before and after implementation of quantified and graded management of food hygiene.[Methods]Analytic hierarchy process was adopted to classify hygienic situation into orderly hierarchical structure based on dominance relationship grouping.Through multiple comparisons,the relative importance of hierarchical factors was determined,finally,the overall situation of food hygiene in dining room of schools and kindergartens was comprehensively evaluated.[Results] Place area,layout process,defense facilities,special room hygiene,label of raw food and cooked food,tableware sterilization,raw materials for certificates,health system,a health certificate,food retention samples of hygiene in combination weight(Wi) were 0.3591,0.167 8,0.075 0,0.035 0,0.164 5,0.066 7,0.027 0,0.062 3,0.028 9,0.013 4,hygiene comprehensive index(V) V before=59.09,V after=78.34,V afterV before.[Conclusion]Graded management of health inspection on food hygiene in dining rooms of schools and kindergartens make the education authorities increase the investment in infrastructure improvements of dining room of schools and kindergartens,and cause school food hygiene management level increasing.After implementation of quantified and graded management,the overall situation of food hygiene is obviously increased.The analytic hierarchy process has great potential in application.
