摘要
目的了解白山市市售食品中铝污染情况,为今后有计划和针对性地开展食品卫生检测工作提供依据。方法对辖区内部分市售食品进行随机抽样检测,按《食品中化学污染物和有害因素检测工作手册》中铬天青S分光光度法进行测定,卫生学评价按《面制食品中铝限量》(GB 15202-2003)(铝100 mg/kg)进行评价。结果在抽样的110份样品中猪肝、鸡肝、海鱼、河鱼、膨化食品、茶叶铝含量符合国家标准,油条铝含量超标,100.0%不符合国家标准;海带、紫菜均不符合国家标准;抽检食品铝含量以油条中的铝含量最高715.0 mg/kg,其含量范围为4.1~715.0 mg/kg。结论食品中铝含量超标与食品生产加工过程中含铝膨松剂(明矾)过量使用有关;同时亦有富含铝的海生植物如海带、紫菜等,应引起有关部门的重视,对海生植物类食物如海带、紫菜等制定出标准。
Objective To explore the situation of aluminum pollution in foodstuff saled,provide evidences for food inspection.Methods Random sampling was used to detect part of foodstuff saled in the area.Chromazurol S spectrophotometry method was applied based on the relative standards,and hygienic evaluation was on the basis of GB 15202-2003.Results 110 samples were selected,in which aluminum contents of pork liver,chicken liver,sea fish,river fish,snack food and tea were in line with national standards;The aluminum contents of fritters,kelp and laver samples exceeded the national standards.Content of fritters was highest(715.0 mg/kg) in all samples in the range of 4.1-715.0 mg/kg.Conclusion The excessive aluminum content is related to using excessive aluminum-containing leavening agents in the food production process;There are also aluminum-rich sea plants such as kelp and lavers,so it is suggested that relative department should institute standards for sea plants.
