摘要
鱼露,又名鱼酱油,是一种以鱼、虾为原料发酵而成的调味酱汁。对制作鱼露生产工艺的前处理清洗称重工序进行设计和研究。分别利用滚筒式连续清洗机对杂鱼进行连续清洗,利用脱水系统、输送带系统和自动称量输送带的联动,对清洗后的杂鱼进行间歇性的自动称量。提高自动化水平和保证食品卫生安全,为后工序提供质量的保证。
Fish sauce,also known as fish soy sauce,is a flavoring sauce fermented using fish and shrimp as raw materials.This paper designs and studies the cleaning weighting working procedure at pre-processing of fish sauce production process.The dewatering system、conveying system and automatic weighting conveyor will be applied for automatic intermittent weighing to the various-type fish after continuous cleaning by roller-type continuous washing machine.The enhanced automation and guaranteed foodstuff sanitation and safety ensure premium quality for post-processing.
