摘要
以冬枣为试材,研究了不同臭氧浓度处理对冬枣果实多酚氧化酶和过氧化物酶活性的影响。结果表明:臭氧处理能抑制冬枣多酚氧化酶的活性,使过氧化物酶活性保持较高水平,其中以40mg/m3臭氧浓度处理最佳。
With Dong jujube as materials, different Ozone treatments on activity of PPO and POD were studied. The results showed that ozone treatment could inhibit the activity of the jujube polyphenol oxidase PPO and peroxidase activity of POD to maintain a high level. And the best Ozone treatment was 40 mg/m3.
