The turbot (Scophthalmus maximus L) is a kind of nutritious fihs for food and suitable for maricuhure in China. Turbot contains abundant nutrients such as protein, lipid, essential fatty acids and soluble collagen. These nutrient components can meet the special nutritional needs of human body. This paper also introduces the food characteristics of turbot and the research status and research group which lead the rapid development of turbot culture in China.
