摘要
通过测定白酒在氧弹量热计中的燃烧热值求算白酒中乙醇含量,并将化学热力学方法引入食品分析中,是食品专业"物理化学"课程实验内容的拓展。实验教学研究表明,该法重现性好,准确度高,简便易行,可与国标法互补,尤适于车载式现场检测,可作为热力学和食品分析常规实验项目。
Calculated alcohol content of spirit usu.by determination of heat of combustion in oxygen bomb calorimeter,and lead chemical thermodynamics method into food analysis,it was developed that food professional subject "Physical Chemistry" course experimental content.The experimental teaching research show that this method was reproducible,accuracy and simple,it can replenished with the national standard method,suitable to field inspection in vehicle mode especially.It can be used as a conventional experimental item of thermodynamic and food analysis.
