摘要
以茶花粉为原料,采用发酵法提取得到花粉母液进行花粉运动饮料的研制,通过单因素试验和正交试验对饮料中花粉母液、柠檬酸、氯化钠、葡萄糖的用量进行探讨,得到了花粉运动饮料的最佳工艺配方为:花粉母液添加量25%,氯化钠添加量1.5%,葡萄糖7%,柠檬酸添加量0.15%。
Camellia pollen was used as the major material which was extraction of fermented in preparing a pollen sports beverage.Based on the single factor and orthogonal experiments,the amounts of camellia pollen-water,NaCl,glucose,citric acid were studied.The optimal formula was concluded as follows：camellia pollen-water was 25%,NaCl was 1.5%,glucose was 7% and citric acids was 0.15%.
