摘要
本研究针对南京市409家西点经营企业的运营状况运用观察法、专家访谈法、网络调研法,创新性的借助门店经营方式及产品加工方式两个要素将西点店运营模式划分为:代售点、前店后场、成品连锁配送、连锁门店配送加工4种模式。通过对各模式的比较研究,对南京市西点店存在问题提出了发展建议,有一定的实践指导意义。
This paper starts with the analysis of the operation status of 409 bakeries in Nanjing,then categorizes them according to the mode of operation and processing into four models.Based on the comparative study of these models,the author concludes with some practical suggestions for the development of local bakeries.
