摘要
根据ISO22000标准的要求,并结合雨润肉类产业集团有限公司下属分子公司实际生产情况,建立一套较为科学的、完整的适用于规模化生猪屠宰企业的操作性前提方案。通过检测屠宰过程中主要工序胴体表面、分割线上猪肉、屠宰分割线上工器具及员工的手的菌落总数和大肠菌群,对建立的操作性前提方案的效果进行验证。结果表明过程卫生得到良好控制,产品菌落总数和大肠菌群指标符合国家标准,从而验证了操作性前提方案在生猪屠宰企业应用的有效性。
According to the IS022000 standard and actual production practice of subsidiaries of Jiangsu Yurun Meat Industry Group Co. Ltd, a set of scientific and intact operational prerequisite program that was applicable to large - scale pig slaughtering enterprises was established. The effect of operational prerequisite program was identified by detecting aerobic plate count and coliform group on the surface of carcasses of the main working procedures, pork, cutting tools and workers' hands at each working site of slaughtering and cutting line. The results showed that the hygienic condition was under control, the aerobic plate count and coliform group levels of pork reached the national standard, and the effectiveness of operational prerequisite program applied in live pig slaughtering enterprise was proved.
