"苽"一名"蒋",也写作"菰",为禾本科菰属多年生宿根水生草本植物,是一种粮、菜兼用的作物。汉代以前,尤其唐代,苽米是主要的食用部分;唐以后,其米多用来救荒。"苽"在古文献中也称"雕苽"、"雕胡"。作为菜食用,始见于《尔雅》。宋之前,一般称为"菰菜";至宋,始见"茭白"一名。"茭"得名于其根"交结","白"得名于其肉质茎色白。此名一直沿用至今。"菰首"也作"菰手",是指茭白顶端白嫩、柔软似小孩手的部分。
