摘要 "苽"一名"蒋",也写作"菰",为禾本科菰属多年生宿根水生草本植物,是一种粮、菜兼用的作物。汉代以前,尤其唐代,苽米是主要的食用部分;唐以后,其米多用来救荒。"苽"在古文献中也称"雕苽"、"雕胡"。作为菜食用,始见于《尔雅》。宋之前,一般称为"菰菜";至宋,始见"茭白"一名。"茭"得名于其根"交结","白"得名于其肉质茎色白。此名一直沿用至今。"菰首"也作"菰手",是指茭白顶端白嫩、柔软似小孩手的部分。 "Gu"has another name "Jiang", also writing " Gu", is a kind of ratoon aquatic perennial grasses of herbaceous plants. "Gu" is the grain also vegetables crops. Gu grain is the main edible part before the Han dynas- ty, especially in the Tang dynasty. Before the Song dynasty, commonly known as the " Gu vegetable "; To the Song dynasty, beginning to see the name " Jiaobai". "Jiao" takes its name from its roots "collusion" and "white" takes its name from its stem color is white. This name has been used today. "Gu shou" and "Gu hand" is to point to the top of the Jiaobai that like the hands of the ehildren which white and soft.
