摘要
对山梨酸及其盐在国内及国际食品行业中的应用进行了比较分析,指出了我国山梨酸及其盐的限量标准和应用范围与国外标准存在的差距。对卫生部新修订的标准中,适当调整山梨酸及其盐在部分制品中的使用范围和使用量的规定,提出具体建议。
The paper compares and analyzes the application of sorbic acid and its salts in domestic and international food industry, points out the difference in the limit standard and application range of sorbic acid and its salts between domestic and international food industries, and finally provides concrete suggestions about the adjustment of application range and used amount of sorbic acid and its salt in some products according to the revised standards by Ministry of Health.
