采后处理对紫色菊花花瓣花青素吸收光谱及抗氧化活性的影响 被引量:2

Effects of Post-harvest Treatments on Absorption Spectrum and Antioxidant Activity of Anthocyanin Extracted from Purple Chrysanthemum Petals

摘要 采用32℃烘干、-40℃冻干、-18℃冷冻、液氮冷冻后-18℃冷冻、-80℃冷冻和液氮冷冻后-80℃冷冻等方式处理紫色菊花(Dendranthema morifolium Tzvel.)花瓣,考察采后处理方式对紫色菊花花瓣花青素提取液的吸光度和二苯代苦味酰基自由基(DPPH.)清除能力的影响。结果表明,32℃烘干和-40℃冻干处理后紫色菊花花瓣花青素的紫外吸收峰峰值、可见光吸收峰峰值和DPPH.清除率均极显著高于其他处理;低温冷冻会导致紫色菊花花瓣花青素提取液吸收峰峰值和DPPH.清除率的下降。综合考虑操作流程和生产成本,32℃烘干是最适合紫色菊花花瓣的采后处理方式。 6 different post-harvest treatments,drying at 32 ℃,frozen-drying at-40 ℃ or-18 ℃ storage,-18 ℃ storage after frozen in liquid nitrogen,-80 ℃ storage and-80 ℃ storage after frozen in liquid nitrogen,were applied on purple chrysanthemum(Dendranthema morifolium Tzvel.)petals to study their effects on the absorption spectrum and DPPH.clearance capability of anthocyanin extracted from purple chrysanthemum petals.The results showed that after been treated by drying at 32 ℃ or frozen-drying at-40 ℃,the UV absorption peak,visible light absorption peak,and DPPH.clearance rate of anthocyanin extracted from purple chrysanthemum petals were very significantly higher than that of other treatments.Cryogenic freezing would decrease the absorption peat and DPPH.clearance rate of anthocyanin.According to processing techniques and production cost,the optimum post-harvest treatment for purple chrysanthemum petals was drying at 32 ℃.
