摘要
在创新统计分析方式及评选方法的基础上,得出2011年度餐饮百强企业经营发展主要特点:餐饮百强企业产业规模稳步增长,但产值质量有待提升;餐饮百强业态格局不变,但业态分化与互渗的趋势日益明显;市场竞争与成本压力日益加剧,餐饮百强企业综合业绩表现逊于往年;各业态盈利能力的短板凸显,总体盈利水平偏低;管理出效益遭遇瓶颈,餐饮百强企业经营效率和管理效率均有所下降;在用工荒常态化下,工资成本上涨与人均效率下降并存。
Based on the innovative statistical method, the top restaurants of China in 2011 bear the following features : The scale of the industry is growing steadily yet the quality of revenues is still low ; The overall land- scape of the top restaurants remains unchanged yet there is an increasingly clear trend of diversification and penetration ; Compared with previous years, the general performance of the 100 restaurants are weak due to the growing competition and cost; The weak profit-earning capacity across the restaurants is notably clear; With the management at its bottleneck, the operation and management of the 100 restaurants decline in efficiency; Given the continuous labor shortage, there is the coexistence between growing labor cost and declining per ca- pita efficiency.
