水泡去心法与机械去心法对莲子中主要有效成分影响的比较

摘要 目的探讨水泡去心法及机械去心法对莲子中水溶性多糖、总黄酮含量及超氧化物歧化酶活性的影响。方法收集新鲜广昌常规莲,将样品分为A、B、C、D、E及F组,对A、C、D、E及F组采用水泡去心法,B组则采用机械去心法。A、C、D组分别在50℃浸泡1 h、2 h及3 h,E组及F组则分别在65℃及75℃中浸泡1 h。检测并比较各组总黄酮及水溶性多糖含量,超氧化物歧化酶(SOD)活性。结果 6组的总黄酮含量无明显差异(P>0.05);与A组相比,B组水溶性多糖含量及SOD活性显著提高(P<0.05),C组及D组水溶性多糖含量显著降低(P<0.05),E组及F组SOD活性显著降低,且以F组降低更为明显(P<0.05)。结论机械去心法较水泡去心法更能保留莲子中有效成分,水泡去心法丢失有效成分可能与水泡时间及温度有关。 Objective To explore and compare the effect of coring with water or machine on contents of water-soluble polysaccharide,total flavonoids and SOD activity.Methods Regular lotus seeds from Guangchang were collected,divided randomly and evenly into group A,B,C,D,E and F.Group A,C,D,E and F were processed by water coring,while group B was processed by machine coring.Group A,C and D were soaked in 50 ℃water for 1 h,2 h and 3 h;group E and F were soaked in 65 ℃ and 75 ℃water for 1 h.Contents of water-soluble polysaccharide,total flavonoids and SOD activity were compared.Results Six groups of the total flavonoids content had no significant difference(P〉0.05).Compared with group A,SOD activity and contents of water-soluble polysaccharide imcreased significantly in group B(P〈0.05),contents of wate-soluble polysaccharide decreased significantly in group C and D(P〈0.05),and SOD activity decreased significantly in group E and F,which was more significantly in group F(P〈0.05).Conclusion Machine coring can better preserve the effective constituents than water coring,whose active constituents may be related to soaking time and temperature.
