摘要
以6只150 d龄的獭兔为对象,以气质联用(GC-MS)技术分析獭兔腿肌和背最长肌中脂肪酸组成,为獭兔肉的开发和利用提供理论依据。对獭兔肌肉脂肪酸组成的测定结果表明,在獭兔肌肉中检测出包括顺、反异构体及位置异构体在内的31种脂肪酸成分,其中支链脂肪酸(BCFA)2种、中链脂肪酸(MCFA)2种、长链脂肪酸(LCFA)7种、奇数碳脂肪酸(OCFA)2种、单不饱和脂肪酸(MUFA)9种、多聚不饱和脂肪酸(PUFA)10种,獭兔腿肌中的饱和脂肪酸(SFA)和不饱和脂肪酸(UFA)的含量分别为36.72%和59.45%,獭兔背最长肌中的饱和脂肪酸(SFA)和不饱和脂肪酸(UFA)的含量分别为36.79%和57.38%;獭兔腿肌和背最长肌的饱和脂肪酸(SFA)和不饱和脂肪酸(UFA)差异不显著。
6 rex rabbits are slaughtered to study the fatty acid composition in thigh muscle and in longissimus dorsi (LD) muscle of rex rabbit meat by GC-MS technology in this experiment. The results show that fatty acid composition are detected 31 species, include, the cis-trans- isomer and position isomer. Among them, branched chain fatty acid (BCFA) two kinds, medium chained fatty acids (MCFA) two kinds, long-chain fatty acid (LCFA) 7 kinds, odd-carbon fatty acid (OCFA) two kinds, mono-unsaturated fatty acid (MUFA) 9 kinds, poly-unsaturated fatty acid (PUFA) 10 kinds. The contents of saturated fatty acid (SFA) and unsaturated fatty acid (UFA) are respectively 36.72% and 59.45% in thigh muscle of rex rabbit meat, and those are respectively 36.79% and 57.38% in longissimus dorsi (LD) muscle of rex rabbit meat. There is no striking difference between saturated fatty acid (SFA) and unsaturated fatty acid (UFA) in thigh muscle and longissimus dorsi (LD) muscle of rex rabbit meat.
