摘要
紫甘薯是紫肉甘薯,是甘薯的一个变种,含有丰富的花青素、矿物质、膳食纤维,北京地区紫甘薯的种植面积逐年扩大,其深加工产品不断开发,已经成为极具发展前景的绿色、休闲、保健食品。本文从北京地区紫甘薯的种植情况、营养开发、色素提取等深加工技术方面进行了分析和阐述。
Purple sweet potato is a variety of sweet potato, which contain rich anthocyanins, minerals and dietary fiber. In recent years, a substantial production is got with the expanded of the plant area in Beijing area, the fresh-keeping store and the deep processing is the key to prompt the value of the purple sweet potato and to prolong industry chain.
