菠萝皮渣水不溶性膳食纤维对油脂 胆固醇 胆酸钠及NO_2^-的吸附作用 被引量:9

摘要 主要研究了菠萝皮渣水不溶性膳食纤维对油脂、胆固醇、胆酸钠及NO2-的吸附作用。结果表明,菠萝皮渣水不溶性膳食纤维的膨胀力为3.25 mL/g,持水力为4.73 g/g;对花生油的吸附量为1.49 g/g,对猪油的吸附量为1.94 g/g;在中性环境下吸附胆固醇的能力比在酸性环境中的吸附能力大,pH值7时最大吸附量达33.35 mg/g,吸附平衡时间约90 min;对胆酸钠的吸附平衡时间约3 h,最大吸附量达到98.86 mg/g;对NO2-的吸附能力随着环境pH值的增大而降低,当pH值2时可在90 min内将溶液NO2-浓度从100μmol/L降至5μmol/L以下,最大吸附量可达9.94μmol/g。上述性质表明菠萝皮渣水不溶性膳食纤维是一种优质的膳食纤维资源。 Laboratory scale experiments are carried out to evaluate and determine the adsorption of dietary fiber from pineapple peel prepared by chemical method to fat, oil, cholesterol, sodium tauroglycocholate and NO2-. It is found that its water-keeping ability and swelling degree are 3.25 mL/g and 4.73 g/g respectively, and the adsorption amount of peanut oil and lard are 1.49 g/g and 1.94 g/g respectively. The adsorptive capacity of cholesterol in the neutral environment is higher than in the acidic environment, the maximum adsorption amounts is up to 33.35 mg/g at pH 7, and the adsorption balance time is 90 min. The maximum adsorption amount of sodium cholate is 98.86 mg/g, and the adsorption balance time is about three hours. The adsorption capacity on NO2- decreases with increasing environmental pH, the solution concentration of NO2- from 100 μmol/L down to 5 μmol/L or less in 90 min when pH 2, the maximum adsorption amount of NO2- is up to 9.94 μmol/g. These properties show that pineapple peel waterinsoluble dietary fiber is a high-quality resource of dietary fiber.
