摘要 与传统的食品杀菌方法相比,高压脉冲电场非热处理技术因具有处理时间短、温升小、能耗低、杀菌效果明显、能有效保存食品营养成分和天然色、香、味等特征成为目前食品杀菌工艺中研究最为活跃的技术之一。主要介绍了高压脉冲电场的杀菌作用机理、杀菌特点及其杀菌影响因素,着重综述了高压脉冲电场近10年来在食品工业(食品杀菌、增鲜、护色、解冻及其酒类催陈等方面)中的应用现状及应用前景,对高压脉冲电场的工业化应用前景进行了简单的探讨。 The high-intensity pulsed electric fields (HIPEF) makes a contrast with the traditionary food sterilization, HIPEF non-heat treatment technology is becoming one of most active technologies that study bacteria killing due to its short-handling time, slight temperature rise, low power consumption, obvious effect and effective conservation of the food, nutrients and natural characters of color, smell and taste etc. This paper mainly reviews the sterilization mechanism, characteristics and affecting factors of HIPEF. Meanwhile, this paper emphasize summarizes the application in the current situation and prospect of HIPEF on food processing (food-sterilization, increasing fresh, remaining durable color, defrosting and ageing in the wine etc.) in recent 10 years. And it simple discusses the prospect of industrial application about HIPEF.
