固定化酶以稳定性和可重复使用性等优点在许多领域得到广泛应用并已得到长足的发展。本文介绍了固定化酶技术的发展,重点阐述了其在茶叶方面的研究和应用,肯定了固定化酶技术在提升茶产品品质,开发新产品方面的重要作用。
The immobilized enzymes have been widely applied in many fields tbr their stability and reusability. In this article, development and application of immobilized enzyme in the tea industry were introduced. The important role of immobilized enzymes in improving tea quality and developing new products were reviewed.
