新疆薄荷色素的提取及其稳定性研究 被引量:2

摘要 采用正交试验对新疆薄荷色素的最佳提取条件进行了研究,并探讨该色素的稳定性。结果表明,薄荷色素的最佳提取工艺为:料液比为1∶35,乙醇浓度为70%vol,浸提时间2h,提取温度40℃条件下色素产率最高;该色素耐高温性、耐光性好,在常用食品添加剂等条件下有较好的稳定性,可作为天然植物色素在食品、饮料等行业中使用。 The optimum extraction conditions of pigment ofXinjiang Mentha haplocalyx Briq were studied by or thogonal test. And the stability of the pigment was analyzed. The results indicated that the optimum conditions were ratio of material to liquid was 1:35, ethanol concentration was 70% vol, extraction time was 2h, extraction temperature was 40%. The highest yield was obtained of pigmem. The pigment was resistant to, heat light, and common food additives. So as a kind of natural plant pigment it can be used extensively in food and drinks industry.
