在生料制醋生产技术中,进行了科学优化配料,引进了酒精生产中的浓醪发酵,固态发酵白酒生产中的下渣循环利用,生料麸曲,醋醅浇淋陈酿等多项技术,取得了良好的效果。
The material composition for vinegar making from uncooked materials was optimized. Several technologies, such as high gravity fermentation technology in the production of alcohol, recycling technology of fermented grains in the production of liquors by solid-state fermentation, mixing Fuqu with uncooked materials and aging technology by multiple washing of fermented materials, were adopted successfully.
