ClO_2对南美白对虾减菌效果及品质的影响 被引量:2

摘要 研究不同浓度ClO2暂养液在不同处理时间对南美白对虾虾体的减菌效果及其对虾体色泽和质地的影响。研究结果表明,随着ClO2浓度增加(0~30 mg.kg-1)和处理时间的增长(0~20 min),虾体菌落总数逐渐降低,当处理时间达到20 min时,ClO2对对虾的减菌效果趋于平缓,且20 mg.kg-1(CA组)和30 mg.kg-1(CB组)ClO2暂养液对虾体的减菌效果差异显著。ClO2处理组(CA和CB组)对虾体色泽和质地具有一定的影响,a*和b*值增大,剪切力下降,但CA和CB组差异不显著。综合考虑建议选择30 mg.kg-1ClO2浓度处理南美白对虾20 min作为虾体减菌的预处理工艺。
