摘要
以苹果渣为原料,研究了微波提取可溶性膳食纤维的工艺,通过单因素试验和正交实验确定了适宜的提取条件。结果表明:料液比为1∶20,时间为2min,微波火力为中火(功率450W),pH 6.0,该条件下产率可达13.6%。
The microwave extraction process of soluble dietary fiber from apple pomace were described,single factor experiments and orthogonal tests were used to determine the suitable extraction conditions.The results showed that the ratio of solid to liquid was 1∶20,time was 2 min,fire was the intermediate fire（450 W）,pH 6.0.Under these conditions,the yield of soluble dietary fiber reached 13.6%.
