Volatile Compounds of Yueshengzhai Fragrant Beef Extracted with Different Solid Phase Microextraction Fibers

摘要 分别采用65μm PDMS/DVB、75μm CAR/PDMS、50/30μm DVB/CAR/PDMS 3种萃取头提取月盛斋清香牛肉挥发性成分,经气相色谱-质谱联用仪(GC-MS)对挥发性成分进行鉴定,分析比较了3种萃取头提取的挥发性成分差别,确定适宜的萃取头。3种萃取头共检测出53种挥发性化合物,通过对3种萃取头萃取效果的比较,发现75μm CAR/PDMS萃取头对月盛斋清香牛肉的挥发性化合物的萃取较有利。 The volatile compounds of Yueshengzhai fragrant beef were extracted by solid phase microextraction with three different solid phase microextraction fibers:65 μm PDMS/DVB,75 μm CAR/PDMS and 50/30 μm DVB/CAR/PDMS.The volatile compounds were identified by gas chromatography-mass spectrometry.A comparison was made of the difference of the volatile compounds extracted with different solid phase microextraction fibers in order to find out the most suitable solid phase microextraction fiber.Altogether 53 volatile compounds were identified.The comparison of the extraction shows that 75 μm CAR/PDMS was the best solid phase microextraction fibers for the extraction of the volatile compounds of Yueshengzhai fragrant beef.
