莲藕采收后生理生化指标的研究 被引量:16

摘要 运用改进的吸收法、分光光度法和其它几种分析方法相结合对莲藕 (Nelumbonuciferagaertn )采收后的呼吸强度、引起褐变的酶活性、褐变度以及糖和蛋白质含量等多种生理生化指标进行了快速准确的测定 .实验发现 ,莲藕采收后 1 1d,总糖含量由 1 2 8.1 3mg/g降至 7.6mg/g,酶活力和还原糖含量分别由 2 .2 1U/g和 4 .79mg/g升至 3.74U/g和 1 9.4 8mg/g,呼吸强度在第 3d出现高峰 ,同时其它指标均有相应的明显变化 .对所得数据进行相关性分析 ,发现各指标间均有相关 ,大部分的相关系数高于 0 .9.建议采收后的 3d内必须对莲藕进行一定的保鲜处理 .上述研究可为莲藕贮藏保鲜提供一定的理论依据 . The variation of physiological and biological factors is very important for vegetables′ fresh keeping.The result can be easily and accurately got by certain improved methods such as comparing the quantities of carbon dioxide which is absorbed by potassium hydroxide,measuring absorption of substrates catalyzed by the key enzyme for browning,and other regular methods.It is shown that maximum respiratory rate was occurred at the 3rd day.Activity of enzyme which catalyze the corresponding substrate browing was violently increased from the 3rd day while brown degree shown a similar variety.Content of total sugar was dropped about 120 mg/g while content of reducing sugar was raised from 4.79 mg/g to 19.48 mg/g.With help of computer softwares,significant correlation was found in all this variations.From this,a theoretical gist can be made in order ot improve technique of fresh keeping of lotus roots.
