摘要
选择不同比例民猪血统(民猪血统比例为1,1/2,1/4,1/8,0)的商品仔猪60头,在同一营养水平下,研究民猪血统对生长肥育猪肌肉品质及肌纤维特性的影响。结果表明,民猪及其杂种猪与杜大长杂种猪相比肉色好(P<0.05),pH正常,滴水损失低(P<0.05),干物质含量高,肌内脂肪含量高(P<0.05),无异常肉发生,肌肉品质随民猪血统比例的增加而改善。肌纤维直径随民猪血统含量增加而变细,肌束内纤维个数逐渐减少。
Sixty different commercial pigs hybriding with different Min pig consanguinity(1,1/2,1/4,1/8,0) were used to reveal the effect of Min pigs different consanguinity on muscle quality and muscle fiber characters of finishing pigs with the same nutritive level.The result showed that compared with D×(Y×L) pigs,Min pig and its hybrids had more acceptable meat color(P0.05),normal pH,lower drip loss(P0.05),higher dry matter content and higher intramuscular fat content(P0.05).The muscle quality of Min pigs were better than its hybrids,and it was decreased as Min pigs consanguinity decreased.The diameter of muscle fiber and the muscle fiber number were decreased as Min pigs consanguinity increased.
